The new edition of the Thistle Festival (Cardo Gobbo) returns to Cervia, from 25th to 26th January 2025.
Cardo (Thistle) di Cervia, a food that is produced in small quantities and is only cultivated during the winter, in the coldest months of the year, is one of the typical food products recognised by the Emilia-Romagna region.
This is why, every year, Cervia dedicates a long eno-gastronomic weekend to this vegetable in order to get to know and appreciate this food.
The Cervia thistle is very versatile and can be used in an infinite number of preparations. Moreover, for its depurative, digestive, and antioxidant action, it is much appreciated by those who want wellness also at the table.
