Marinating fish in Comacchio is a centuries-old tradition, rooted in the local culture of the Lagoons.
The fish, after being fried or cooked in the big fireplaces of the Manifattura dei Marinati, is stored thanks to a mixture of vinegar, water and salt still prepared according to the traditional recipe. This process gives the fish a unique and extraordinary flavour, and makes it a typical product and a symbol of the Comacchio lands.
The Marinated Fish Festival aims to celebrate the ancient Comacchio tradition of marinating fish, with activities and initiatives that promote this product of excellence from the Comacchio Lagoons. Markets, tastings, guided tours, music, children's workshops, and many other initiatives will be organised during the event.
