For over fifty years, every August, the village of Montecoronaro has come alive with aromas, laughter and tradition thanks to the Sagra dell’Acquacotta : a tribute to the peasant soup that was once made with just a few ingredients and a great deal of love. An opportunity to rediscover the flavours of yesteryear amidst stone walls and mountain air.
Traditional recipe
Sauté onions in oil, add tomatoes and herbs (basil, celery) and cook slowly. Add water or stock and bring to the boil. Place toasted bread with pecorino cheese in bowls, then pour over the hot soup with a boiled egg on top.
Montecoronaro awaits you, as it does every year, with its festive alleyways and crackling bonfires as the sun sets.
